The Children love vegetables – I know I am lucky. They will eat them in all forms but their favourite is in soup form.
This is their all time favourite
Carrot & Coriander Soup:
2 small Potatoes
2 pints of Chicken stock
1/4 Pint double cream
2 tsp Coriander paste
Knob of butter
I love cooking soups as not only does Emmy love them but they are so quick and easy – a must have in this house.
Cut the ends of the Carrots and wash and scrub and slice (you could peel them but I really can’t be bothered as it takes too long).
Peel and dice the Potatoes, Onion and add to a large pan with the carrots and the butter, pop on the pan lid and put over a low heat to steam while you make up the stock.en
Stir well until the butter has melted, add the stock, pepper to taste and simmer for 15 minutes.
Then add the Coriander paste and simmer for another 5 minutes. Add all to a food blender and whizz until smooth. Add the cream, whizz again and serve.
Very easy soup which tastes great!
