Fresh Week – Meal Planning & Pizza Recipe

Today marks the start of Tefal’s Fresh Week – A week of banishing the convenience foods and cooking fresh meals from scratch.

To make things easier for myself I have planned our meals for this week.

This week we will be eating, all home-made and made from scratch:


Lunch: Carrot top soup
Dinner: Home-made Pizza


Minestrone soup
Roast Chicken with all the trimmings


Fennel and Lemon Risotto
Spaghetti Carbonara


Cheese on Toast
Beef stew and dumplings


Aubergine rolls with spinach and ricotta


Broccoli soup
Spaghetti Bolognese


Dippy Eggs and soliders
Jerk Chicken with rice and Gungo peas

Breakfast’s are always the same and we won’t be changing those as it works – Emmy loves Weetabix as does Harry, they have this everyday followed by toast.  Harry will also eat porridge and fruit so I alternate his.  Paul will only have fried breakfasts or Weetabix (I’ve banned the fry-up’s for this week).

For the Pizza dough I used the following recipe:

  • 375g (13 oz) plain flour
  • 1 teaspoon salt
  • 1 tablespoon caster sugar
  • 7g (1/4 oz) dried active baking
  • 2 tablespoons olive oil
  • 225ml (8 fl oz) warm water (45 C)
    We combined everything together with our hands and kneaded, rolled out and then left for half and hour to rest while getting our toppings together.
    The tomato topping was made by blanching 1lb of tomatoes in hot water to remove the skins, cutting in half and removing the pips.  We then added these chopped to a pan with onions (diced with my Fresh Express Max) and with a handful of basil, simmered for about 10 mins then liquidised.
    We also grated the cheese with our Fresh Express.
    Emmy and Harry had cheese Pizza’s, Daddy had Pepperoni and I had diced courgette, mushroom and chicken.

    We put these in the oven on 190 degrees for about 16 minutes.
