Recipe: Home-Made Hot Cross Buns

Easter weekend is fast approaching and that means 2 Easter Egg hunts for us (one with Emmy’s School friends on Friday and the second at Nanny and Grandad’s), the children are very excited but not just about the chocolate, they love spending time with their friends and especially their younger cousin who they dote on.
As much as I love chocolate I much prefer Hot Cross Buns, for me their appearance in the shops is far more exciting than the chocolate eggs.
I’ve never tried to make my own before however Asda asked if we would like to try and we accepted the challenge and I was surprised that they were easier than I had expected them to be, and the kids had great fun at the same time.
For the Buns:
500g Organic Bread Flour, plus extra for kneading
1 level tsp Mixed Spice
1 level tsp Ground Cinnamon
1 sachet Easy Bake Yeast (7g)
75g Caster Sugar
150g Mixed Dried Fruit
250ml Semi-Skimmed Milk
50g Butter
1 Large Egg, lightly beaten
For the Crosses:
50g Plain Flour
1sp Sunflour Oil
1 level tbsp. Icing Sugar
4tbsp Water
For the Glaze:
40g Caster Sugar
4tbsp Milk
  • Grease a baking tray. 
    Sift together the flour, mixed spice, cinnamon and a pinch of salt.  Stir in the yeast, sugar and mixed fruit.
    Heat the milk and butter together in a pan until the butter melts and the mixture is lukewarm.  Test with your finger – if it’s too hot it will destroy the yeast.
    Add the egg and the milk mixture to the flour and mix to form a dough.
  • Knead for 10 minutes.
    Put the dough in a greased bowl, cover with greased Clingfilm and leave in a warm place until doubled in size.
    Turn out onto a floured surface and push out the air.
    Cut into 20 pieces and shape into rolls.
    Place on the tray in a circular pattern
    Cover with greased Clingfilm again until doubled in size
  • Preheat the oven to 220C/200C (Gas mark 7)
    For the crosses, mix the flour with the oil, icing sugar and water to make a paste.
    Put into a piping bag and pipe crosses onto the buns
    Bake for 15 minutes (or until brown)
  • While the buns are cooking – heat the sugar and milk for the glaze in a pan until dissolved and then simmer for 2-3 minutes.
    Brush the buns as soon as they come out of the oven
    Eat warm or leave to cool

While making these ourselves took a lot more effort then buying them in stores it was actually a lot of fun getting the children involved, making a mess, getting our hands dirty and because of this the children both tried them – something they hadn’t done before.
The mess made by the children was greatly increased by Harry trying to ‘build a snowman’ with the flour and then filling his hat with flour and putting it on – always the comedian.
We managed to made 15 Buns with our mixture and the crosses were a pain as my piping bag split half way through.

  1. Clare these look amazing! .. i have always wanted to try hot cross buns but with being laid up after my op i keep forgetting to send hubs for some .. when I'm back on my feet i might try to make my own!
