I don’t know about you but I LOVE a roast dinner, however the preparation time is something which always puts me off, so much so that we rarely have them (even at the weekends sadly). The thought of spending a few hours peeling potatoes, chopping carrots, broccoli and cauliflower, making a cheese sauce and then there is the sheer volume of washing up which comes after all that work…..I think this is what puts me off the MOST!

Having to wash up 4 saucepans, numerous baking trays, all the plates and cutlery and roasting tins where the meat has stuck to the bottom during cooking – I have a tendency to leave them to soak only to find them still in the sink in cold water the following morning where I have forgotten them once again.

So while a roast dinner may be one of my favourite meals it is actually once I prepare the least, or it was until I discovered Bakewell Oven Bags and they have actually been a game-changer in this house.

Bakewell Oven Bags are perfect for cooking your food in the oven (or microwave) in a mess free way, and they actually help to speed up the cooking time by up to 10%.

Place your food inside the bag alongside your seasonings if required, put the bag into an ovenproof dish and tie up using the ties provided, make a tiny incision in the top corner of the bag and cook in the oven (or microwave as usual – although your food will cook a little quicker as all the heat stays in the bag), once cooked remove from the oven and leave to sit in the bag and juices for up to 5 minutes before cutting the bag and removing your food

Your dish you have used to cook in will be clean so no scrubbing is required and certainly no soaking – a huge bonus as it means less washing up.

These bags are also a healthier alternative as you now don’t need to use cooking oils and all the juices which remain in the bag after cooking your meat joints etc. can be used to make a delicious gravy.

Not only are these great for keeping your oven clean and reducing your washing up but they are also 100% recyclable too.

So what can you cook in them?

Well that is entirely up to you! They are suitable for meat, fish and vegetables.

I have discovered that they are perfect for not only cooking a roast chicken in (or if I am really short on time and want a midweek roast then I just pop in some chicken breasts as they only take 20 minutes to cook), and I can add sliced vegetables into another or even roast potatoes and in next to no time I’ve a quick, easy and almost mess free midweek roast.

I also have children who have different tastes when it comes to sauces etc. They love fish as do I but I like to have a spicy sauce over mine when we have with Mediterranean rice, Emmy likes hers to be plain while Harry likes a tomato based sauce over his – with these bags I can place each fish fillet into a separate bag, add the sauces and place into one over proof dish – all are ready at the same time and I don’t have to use separate pans to cook different sauces.

Another thing I love about these bags is how much they encouraged the kids to help with the cooking – they wanted to help add herbs and spices into the bags – and as there were no hot pans to deal with it was easy for me to let them get on with it without the usual “Be careful” or “not too close to the hob/fire”.

Cajun Spiced Salmon recipe

Ingredients:

  • 2 Salmon fillets
  • 1 lime
  • 2 tbsp. coconut milk
  • 1/4 tsp chilli powder (or chilli flakes)
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • pinch of brown sugar

Method:

  • Place the salmon fillets into a roasting bag
  • Add the dry ingredients into the bag
  • Squeeze the juice from the lemon into the bag too
  • Shake gently to mix all ingredient’s together
  • Tie the bag up and place in an oven proof dish
  • Cook in the centre of an oven on 200 degrees for 12-15 minutes

We served with yellow rice (rice cooked with turmeric added to the stock – I use stock rather than water to add a little more taste to the rice) along with diced red peppers, peas and sweetcorn.
