We live for the weekends, no alarms, no rushing out the door and leisurely breakfasts of choice instead of rushed bowls of cereals for ease.
The kid’s all-time favourite breakfast is pancakes with a choice of toppings, be that lemon and sugar, Nutella or berries – there are so many different topping choices, and it is a great way to use up some of that leftover fruit in the fridge (or the last of the ham etc. if having savoury pancakes for lunch)
Lazy Sunday mornings are just the perfect time for indulging in a leisurely breakfast with the family. And what better way to start the day than with a stack of fluffy, melt-in-your-mouth pancakes? As a busy mum, I’ve perfected my pancake recipe over the years, and today, I’m excited to share it with you.
Fluffy Pancakes Recipe for Pancake Day or just a weekend treat
Ingredients
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons melted butter
Instructions
1. Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar, making sure everything is well combined.
2. Prepare Wet Ingredients
In a separate bowl, lightly beat the egg and then add the milk and melted butter. Mix until everything is well incorporated.
3. Combine Wet and Dry Ingredients
Create a well in the centre of the dry ingredients and pour in the wet ingredients. Gently stir the mixture until just combined. Be careful not to overmix – a few lumps are perfectly fine.
4. Let the Batter Rest
Allow the batter to rest for about 5 minutes. This gives the baking powder time to activate and helps to ensure those pancakes become nice and fluffy.
5. Preheat Your Pan
First things first, preheat your frying pan (make sure it is a non-stick pan) over medium-high heat and add a little oil. You want it to be nice and hot before you start cooking your pancakes.
6. Cooking Time
Once your pan is hot and your batter has rested, it’s time to start cooking! If needed, lightly grease the griddle with butter or oil.
7. Pour and Flip
Pour about 1/4 cup of batter into the pan for each pancake using a ladle or measuring cup. Cook until bubbles form on the surface of the pancake and the edges begin to look set. This should take about 2-3 minutes.
8. Flip and Finish
Carefully flip the pancake and cook for an additional 1-2 minutes or until golden brown and cooked through.
9. Serve and Enjoy
Transfer the pancakes to a warm plate and repeat the process with the remaining batter. Serve your fluffy pancakes with your favourite toppings – maple syrup, fresh berries, whipped cream, the possibilities are endless!
Tips for Perfect Pancakes
- Don’t Overmix
As mentioned earlier, it’s important not to overmix the batter. Overmixing can lead to tough pancakes, and nobody wants that! - Keep Them Warm
If you’re making a large batch of pancakes, you can keep them warm in a preheated oven (around 200°F) while you finish cooking the rest. - Get Creative
Feel free to add your own twist to the recipe! You can mix in chocolate chips, blueberries, or even a hint of cinnamon for extra flavour. - Make Ahead
If you’re short on time in the morning, you can prepare the pancake batter the night before and store it in the refrigerator. Just give it a quick stir before cooking.
