How To Make Winter Wonderland Snowflakes With Fondant Icing

Are you dreaming of a white Christmas? Odds are it’ll just be cold and wet like usual, but you can bring the magic of snowflakes to your baking by creating delicate fondant icing snowflakes.

Snowflakes are a fabulous adornment to cakes, cupcakes and biscuits and don’t let the seeming complexity put you off, they are actually quite simple to create.

You’ll need to gather a few supplies:

White fondant icing
Edible shimmer dust to make them sparkle
Silver dragees
Snowflake plunger cutter
A sharp knife or Dresden tool
Some icing sugar
A little clear alcohol like gin or vodka

How To Make Your Fondant Icing Snowflakes

First, dust down your work surface with some icing sugar to avoid your fondant icing sticking. Snowflakes are very fragile and can tear easily so it’s important to keep your area well dusted.
Knead your icing and work it thoroughly to make it pliable and soft.

Roll out the fondant to a depth of about 2-3 mm.
Take your snowflake cutter and press the shape out.
Using a knife, Dresden tool or other sharp implement cut away the excess icing around the flake shape. This stage can be time consuming but persevere to get a beautifully clean finish to the snowflake.

Once your snowflake is cleanly cut out, lightly brush the top of the snowflake with some alcohol. Use alcohol instead of water as it evaporates quickly and won’t dampen your snowflake.
Fix the silver dragees to the snowflake. How many you use is up to you. A good way to start is adding one at the centre and then one at the end of each arm. If you wish to add more you can.

Take your edible glimmer and gently dust it over the surface to give your fondant icing a snowy sheen.

Fixing Your Fondant Icing Snowflake To Your Cakes

These snowflakes can be attached to the top of a cake by using a little cooled boiled water to act as a glue.

If you are placing them directly onto a biscuit that doesn’t have an icing topping then boil some apricot jam with a little water and brush the back of your snowflake with it. This will adhere the fondant icing to the biscuit.

For cupcakes you can either lay them flat onto the frosting on the cupcake, or alternatively let them set overnight so they harden and then set them at an angle in the frosting.
