Since the kids returned back to school in September, it’s all been a bit of a blur and a struggle to return to any sort of routine. The cold and wet weather certainly hasn’t helped.
I struggle to get the children up and out of the house now it’s dark in the mornings and more often than not wet and cold too but things have to carry on even in the winter months, their after school clubs don’t stop it’s just a case adding extra layers of clothing to combat the cold and ensuring they eat a hot, healthy and nutritious meal before heading out again.
Having time to prepare hot meals for the kids can sometimes be difficult – I head out to get Harry from School at 3.15 pm, return home at 3.50 pm and at least twice a week we have to be out of the house again for clubs by 6.15 pm. The kids have to get changed out of their uniforms, we have to get their reading done for the evening and homework too, and I also use this time to make their packed lunches for the next day, and repack their school bags (well Harry’s – Emmy is old enough to sort her own bags now, although I do tend to double check otherwise she forgets when her PE days are or when she needs trainers and not football boots)

On club days we tend to eat hot meals which take little time to prepare, as I don’t always have the luxury of being able to do that in the daytime – nuggets and chips, pasta dishes and anything which can be prepared in a hurry are my go-to options for these days.
Toad in the hole is one of the kids favourites however until I was introduced to the Richmond Toad in the Hole Meal Kit it wasn’t something I would make during the week as mixing up the batter mixture can be a little time consuming when you are lacking time, and mine was always rubbish – no matter how hard I try mine never rise when I make my own batter.

These kits have solved that issue by having a batter mix ready to use in the box – just add water and mix together while the sausages cook in the oven. I use this time to peel the potatoes and other vegetables and when I pour the batter onto the sausages then start to cook the vegetables….of course, this could be made even easier by using frozen veg if you really wanted.

With a preparation time of only 5 minutes for the toad in the hole, this makes for a rather quick and easy dinner option for us busy parents – 30 to 40 minutes in the oven and no faffing about at all, that really is what I prefer on these busy after work/after school days when we are all tired and hungry.
Richmond Toad in the Hole Meal Kit is available in most major supermarkets, providing families with a new way to enjoy the nation’s favourite sausages with a fuss-free dinnertime option at a cost-effective price.

The thing I like best about this kit is that there is no measuring out of ingredients needed, except for the amount of water needed. This means that Harry could prepare this dinner with me. He loves to help out in the kitchen, peeling carrots and potatoes and stirring all the foods when cooking over the hob. This he was able to make all on his own and was super prove of his efforts too.

What are your go-to meals for busy after-school days?
