Warming Winter Vegetable Soup

The weather has most definitely turned and that now means warming soups for our lunch, for me sandwiches just don’t cut it when it’s cold and wet.
This is a filling soup made using winter vegetables and it’s cheap to make which is always a bonus.
We made ours using the pre-packed stew packs in Tesco which only cost £1.

1 small suede
1 medium onion
1 medium parsnip
4 medium carrots
3/4 pint of vegetable stock
5fl oz double cream
Salt & Pepper to taste
Method :

I use my Hotpoint Steam and Blend for all my soups now but you can easily pop all the ingredients into a pan along with the stock and cook in there then blend after.
*wash and peel all vegetables
*cut/slice all into cubes around 2cm
*put all into the steamers and steam for 18/20 minutes
*add stock and seasoning and blend until smooth
*Add cream and stir in
*serve hot with crusty bread
