I know I’m not alone in the fact that I rarely eat breakfast, I do make sure the kids have something before school (most of the time – there are only so many times you can ask them what they want or put something in front of them for them to say “I don’t want that” before you give up). I do find they prefer something hot for breakfast if we have time but let’s face it on school mornings there is rarely time to whip up a hot breakfast. Read on for some quick and easy microwave breakfast recipes.
To make things easier I have a few go-to options for days I am short of time, here are a few of the kid’s favourite breakfasts and a few microwave recipes which help to make our mornings a little easier:
Microwave breakfast recipes
- Beans or Spaghetti on Toast
This is a quick and easy option, made even easier by microwavable mini pots but if you have tins you can open, pour into a microwavable bowl or even a measuring jug, cover with cling film piercing a few holes to release the steam and pop into the microwave. While beans don’t take long to cook on the hob this option means you can finish getting the kids dressed while not worrying about burning the pan - Porridge
Make this in a bowl or a measuring jug, stir and cook in the microwave – I find the kids only like a small bowl so I add Organic Oats to a bowl and add the milk, making them individually and it only takes around two minutes, add a little more milk and stir well to avoid hot spots. Season to taste - Scrambled Eggs
Beat eggs with a little milk and season to taste. Microwave on full power for 45 seconds, carefully remove and stir and repeat until the eggs are set - Cheese and Pepper Coffee Cup Scramble

- Apple Mug Muffin
A dessert or a quick grab breakfast – Emmy loves these - Pancake Mug Cake
This is one of Harry’s favourites – he loves pancakes but I can’t make them quickly every morning just for him – the full recipe can be found over at Kirbie Cravings - Bacon Sandwiches
Many newer microwaves have a grill feature which makes this really easy, another option is to sandwich the bacon in between two sheets of kitchen roll and cook for 4-6 minutes on high power, you can do up to around 4 rashers at a time - Poached Eggs
Crack an egg into a large teacup or ramekin filled with 3 tbsp. of water. Pierce the yolk and the white a couple of times (I use a cocktail stick to do this), microwave on high for 45 seconds, turn the dish and repeat for another 45 seconds. Leave to stand for 30 seconds before serving
